I’d like to introduce myself to you. I’m Kevin, thesaltychef. I’m a cook.. who happens to be a chef( I know many "chefs" who do not know how to cook ;) )
I have been an Executive Chef for over twenty years now and I’d like to share with you my latest experiences in food and life.
Low Salt.. No Salt.... Low Sodium Meals.
I was introduced to this concept after my mom was diagnosed with AVIB and a weak heart valve, and lymph-edema.
After her last visit to the hospital (she was released on St Patrick’s day; 2020 ) right before the covid-19 thing started here in Fla.… She was required or, they suggested, I should say, to start a low sodium, low salt diet…to consume no more than 2000 mg sodium per day.... approx ¾ tsp. of table salt daily (I have always used kosher salt when cooking, it contains a bit less sodium or you can choose Pink Salt .)
Ok, I said, that is no big deal. I’ll cook without salt .... right??? .... what’s the big deal ???
WOW…
For the past few years of her life, I have been “killing” her with my cooking.
2000 mg equates to 3/4 tsp. .... yes… Not Even One teaspoon per day.
Wow… she was eating like (in retrospect) …close to 3000 per day, WITHOUT TAKEOUT.. with takeout (Chinese food) OMG… I don’t want to even think about it….
After sharing my experience with friends (their loved ones had the same issue or was treading down that path)
All my friends kept asking.....
Another friend then introduced me to the idea of a 'blog’.. Share it with others ??….
Well.. here we are.

I even found out a way to “treat” your loved ones to that “fast food”... A dish they may love sooo much, but cannot “just eat unwillingly”.

I will be writing and sharing any info I see fit that will aid and help you cooking for loved ones. I will offer cooking techniques to replace that “lost salt taste”…. I’ll be including quick and interesting reads…pantry stocking… refrigerator stocking… “prep once ; cook for the week” type meals. And I’m also posting nutritional analysis with the meals and different meal components.. So this way, you can see what you are serving and doing, which in-turn, will also help you to diversify you meal service. I hope you will participate. You are all invited to share experiences.. As I noticed over the past year with my Instagram account and with all the persons I have met over this time.. I believe you will have something to share and teach me…You are invited.
